Cheese is a living, breathing entity. Or so says Formaticum, a Portland company that created a two-ply cheese wrap that maintains the humidity and oxygen exchange of a proper cheese cave. The paper, featuring a wax-coated outer layer and an inner, breathable plastic film, preserves flavor, extends the life of high-end cheeses and retards the spoilage that can occur when cheese “suffocates” in non-porous materials like cling wrap or aluminum foil.
