Up to 40% of the declared weight of some frozen seafood is ice, according to an investigation by the Wisconsin Department of Agriculture. The four-week investigation, involving more than 21,000 packages, was prompted by a complaint by the National Fisheries Institute. According to a report in theChicago Tribune, the ice glaze commonly used for individually quick frozen shrimp and other high-value seafood products was being illegally included in the weight claimed on the front of the packaging. A “significant market share” of seafood packers were found to engage in the practice, according to theTribune’s report. Penalties, depending on the state bringing an enforcement action, could include fines and other court action.
